Ingredients:
- 1 cup brown sugar
- ½ cup peanut butter
- ½ cup carrot (finely shredded/pureed)
- ½ cup cauliflower (finely shredded/pureed)
- ½ cup mashed banana
- 1 large egg white
- 1 cup whole wheat flour
- 1 teaspoon baking power
- 1 teaspoon baking sode
- ½ teaspoon salt
Directions:
- Preheat oven to 350, spray muffin pan with nonstick spray
- Combine ½ cup brown sugar, peanut butter, vegetables, banana, and egg in large bowl
- Mix the flour, baking powder, baking soda, and salt in a separate bowl
- Fold dry mix into wet mix. Don't over mix...you want it lumpy.
- Add remaining ½ cup brown sugar and stir just once or twice (this gives a nice "crust" to the muffins)
- Cook until lightly brown 15-20 min
These also freeze well! Stick in lunch box frozen and they are thawed by lunch and you know you are giving your child some added nutrients to their special treat :)

I've made these like 2 times already because they are SO good. I get a little hesitant when I copy YT recipes, but these were so good and moist. They tasted exactly like banana bread. I also want you to share other green fruits muffin recipes because my kids love fruit muffins. Thanks for the recipe.
